"Just like how she was when she was alive – going wherever her fancy takes her, she thinks and behaves as she likes, not being any different whether she is in the bygone days or in the present days."

... And this still rings true even when summoned by Doctor Stephen Strange, Sorcerer Supreme. It would be inaccurate, however, to say she has stagnated. Shuten Douji retains her memories and experiences from Chaldea and thus, understands the gravity of worlds, timelines, and realities being in constant danger. So although the oni seems to be an incompatible Servant for Stephen Strange, her perception and exposure to these conflicts have made her more ideal as a familiar for him than not. She's flexible and brutal while he's determined and cunning. In a normal Holy Grail War, they would have an extremely high chance of victory as long as he understands and works around her inhuman nature and she, in turn, accepts his righteousness to ensure their mutual survival.

(He will probably never get a straight answer about what Shuten Douji's wish from the Holy Grail would be.)

Currently, their relationship has settled into a "serious middle-aged man of the mystic occult" and "sake loving young woman" as mismatched roommates where the latter likes to test the former's patience and grit. Or another way to look at it is that Shuten Douji, the Demon of Mount Ooe, has become one of the many magical curiosities within the New York Sanctum's walls and another weapon for the Sorcerer Supreme to wield.

Shuten is more accustomed to sharing one Master with many Servants as opposed to the exclusivity formed by this specific contract. Though her flirtations and seductive manner are not different from anyone else she has even the mildest fancy for, it probably seems loaded when directed towards Doctor Strange. She appears pleased about how he doesn't give in to her charms and is fond of him in her own way; Shuten has no trouble admitting she admires both his innate and physical traits. An oni's affection, however, isn't meant to be taken lightly.

Overall, their relationship is both simple and complicated. It's a tension that continues to brew and ferment like a sake whose flavor is unknown for the time being.
